This coffee showcases an innovative processing technique developed at the Zelalem Processing Station in Tibe Haro Uraga, Guji Zone, Oromia Region. The Uraga district, known for its fertile land and pristine forests, provides an ideal environment for coffee cultivation. Over 500 smallholder farmers, each tending to an average of 1.4 hectares, contribute to this unique lot. The extended mucilage fermentation process involves careful selection of ripe cherries, focusing on purple cherries for their higher sugar content. Mucilage from a previous batch of fermented cherries is added to freshly harvested cherries, then sealed in a tank for 18 to 36 hours. This longer fermentation period aims to develop more complex flavours while maintaining the coffee's inherent qualities.
