Nestled in Brazil's high-altitude regions, Fazenda Sertão enjoys an average temperature of 18 degrees C. Strategically planted on hilltops with slopes
reaching 50%, their crops are naturally protected against winter frosts and fungal infections, ensuring superior quality beans. The rugged terrain of Fazenda Sertão necessitates mostly hand-picking of ripe coffee cherries among other safer harvesting methods. This meticulous selection ensures only the finest beans are chosen. These precious cherries then undergo a careful drying process on raised beds, monitored for uniform moisture levels.
